Jamaican Beef Kidney Stew is a flavorful and spicy dish that incorporates traditional Jamaican seasonings and spices. Ingredients
  

  • 2 pounds beef kidney obtain at meat shop
  • 1 medium onion chopped
  • 1 sprig thyme
  • 1 stalk scallion
  • 1/4 teaspoon ground allspice (pimento)
  • 2 cloves garlic crushed
  • 2 tablespoons vegetable oil Can use soy bean oil or virgin olive oil
  • 1 sprinkle ground black pepper
  • 1 tablespoon ketchup
  • 1 sprinkle ground ginger
  • 1 teaspoon meat seasoning
  • 1 teaspoon Grace® Browning (TM)

Method
 

Prepare meat:
  1. Clean kidney. Remove inner fat from middle of kidney and slice into pieces.
  2. Add all purpose meat seasoning, thyme, scallion, black pepper, garlic, pimento and onion. Slowly stir in Grace browning until desired dark color is obtained.
  3. Leave to marinate for at least an hour.
Cook:
  1. In a small pot or kettle boil 2 cups water and set aside.
  2. Add oil to a frying pot and when oil is medium hot pour in marinated kidneys. Stir fry for 2 minutes to brown.
  3. Add ginger, Scotch bonnet pepper and ketchup. Simmer for 20 minutes or until kidney is cooked. Add hot water as necessary until kidneys are cooked or to make extra gravy.
  4. Serve with bread, fried dumplings or boil green bananas.
