Add mashed potatoes, boiled peas, and salt. Mix everything together and cook for a few minutes. Remove from heat and let the filling cool.
Take a samosa pastry sheet or make a cone shape with homemade dough and fill it with the potato mixture. Seal the edges using water to form a triangular shape.
Heat oil in a deep pan for frying. Once the oil is hot, carefully add the samosas in batches and fry until golden brown and crispy.
Remove the samosas from the oil and place them on a paper towel to drain excess oil.
