Ghribia is a delicious traditional shortbread cookie originating from North Africa, particularly Algeria, Tunisia, and Morocco. These buttery and crumbly cookies are usually made with semolina flour, powdered sugar, and butter, along with a touch of vanilla or almond extract for flavor. Some variations of Ghribia also include ground nuts like almonds or walnuts for added texture and richness.

Ingredients
  

  • 1 cup butter (2 sticks) softened
  • 1/2 cup powdered sugar
  • 1 1/4 cups fine semolina flour
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon vanilla extract
Optional:
  • 1/2 cup ground almonds
  • walnuts
  • Powdered sugar for dusting

Method
 

  1. In a mixing bowl, cream together the softened butter and powdered sugar until well combined and creamy.
  2. Add the semolina flour, all-purpose flour, and vanilla extract to the bowl. Mix everything together until a soft dough forms. If you're using ground nuts, add them at this stage and mix well.
  3. Shape the dough into small balls, about the size of a walnut, and place them on a baking sheet lined with parchment paper. Leave some space between the cookies as they will expand slightly while baking.
  4. Using a fork or the back of a spoon, gently press down on each cookie to create a decorative pattern on the top.
  5. Preheat your oven to 350°F (180°C) and let the cookies rest on the baking sheet for about 15 minutes before baking.
  6. Bake the Ghribia cookies in the preheated oven for approximately 15-20 minutes or until they turn golden brown around the edges.
  7. Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  8. Once cooled, dust the Ghribia cookies with powdered sugar for an extra touch of sweetness and enjoy!
