Ganjang gejang is a Korean dish made of raw crabs that are marinated in a soy sauce mixture. The crabs are cleaned, cut into pieces then mixed with soy sauce, chili peppers, garlic, and other seasonings. The dish is usually served cold as a side dish or as a main course with rice.
Clean the crabs by removing their gills, stomach, and other organs. Cut them into pieces, leaving the claws whole.
Mix the soy sauce, water, rice vinegar, sugar, onion, green onions, garlic, ginger, red chili peppers, and black pepper in a large bowl. Stir well until the sugar dissolves.
Add the crab pieces to the marinade, making sure they are fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 24 hours.
Once the crab is marinated, remove it from the marinade and place it on a serving dish.
Drizzle sesame oil over the crab and sprinkle sesame seeds on top.
Serve cold with rice and other side dishes.
The dish itself is not cooked, but rather marinated and served cold. Therefore, most of the time required is for the marination process.Maintain proper preparation of uncooked seafood.
