In a saucepan, combine the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat until the apples are soft and the mixture is thickened, about 10-15 minutes. Remove from heat and let it cool.
Roll out the pie crusts on a lightly floured surface. Cut each crust into 4 equal squares.
Place a spoonful of the apple mixture onto one half of each square. Fold the other half of the crust over the filling to create a triangle shape. Use a fork to crimp the edges to seal.
Heat oil in a deep fryer or a large, deep skillet to 350°F (180°C).
Carefully add the pies to the hot oil, a few at a time, and fry until golden brown, about 2-3 minutes per side.
Remove the fried pies from the oil and place them on a paper towel-lined plate to drain excess oil.
Dust the fried apple pies with cinnamon sugar while they are still warm.
