Ingredients
  

  • 1 pound chicken breasts boneless, skinless
  • 1 can diced tomatoes 14.5 oz
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can kidney beans 15 oz, drained and rinsed
  • 1 onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Method
 

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add diced tomatoes, black beans, kidney beans, onion, bell pepper, and garlic on top of the chicken.
  3. In a small bowl, mix together chicken broth, chili powder, cumin, paprika, salt, and pepper. Pour this mixture over the ingredients in the crockpot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Once the chicken is cooked, shred it using two forks.
  6. Stir everything well to combine all the flavors.
  7. Serve hot with your favorite toppings such as shredded cheese, sour cream, avocado, or cilantro.
