Chorizo chili is a type of chili that includes chorizo sausage as one of the main ingredients which is a type of pork sausage. It has a spicy, smoky flavor and reddish color. In chorizo chili, the sausage is typically browned and cooked with onions, garlic, and a combination of beans and vegetables, such as bell peppers and tomatoes.
In a large pot or Dutch oven, cook the chorizo over medium heat until browned and fully cooked.
Add the onion, garlic, and bell peppers to the pot and sauté until softened, about 5 minutes.
Stir in the beans, tomatoes (including the juice from the can), chili powder, and cumin. Season with salt and pepper, to taste.
Bring the mixture to a boil, then reduce the heat and let it simmer for at least 20 minutes, or until the vegetables are tender and the flavors have melded.
Serve hot. Garnish with shredded cheese and chopped onion (if desired).
