Preheat your oven to 375°F.
In a bowl, combine the chopped chipotle peppers, bourbon, brown sugar, soy sauce, minced garlic, paprika, black pepper, and a pinch of salt. Mix well to create a marinade.
Place the chicken breasts in a shallow dish or a resealable bag. Pour the marinade over the chicken, making sure it is well coated. Allow the chicken to marinate for at least 30 minutes or up to overnight for maximum flavor.
Remove the chicken from the marinade, reserving the excess marinade for later use.
Take two slices of bacon and lay them side by side on a clean surface. Place a marinated chicken breast on top and roll the bacon around it, securing it with toothpicks if necessary. Repeat the process for the remaining chicken breasts.
Heat a skillet over medium-high heat. Add the bacon-wrapped chicken breasts and cook for about 2-3 minutes per side, until the bacon is lightly browned.
Transfer the chicken breasts to a baking dish, pouring the reserved marinade over them. Cover the dish with foil.
Place the dish in the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.
Garnish with chopped fresh parsley, if desired, and serve with your choice of side dishes like roasted vegetables, mashed potatoes, or a fresh salad.
