Ingredients
  

  • 1 lb fresh callaloo leaves chopped (or substitute spinach)
  • 1 lb medium shrimp peeled and deveined
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 scotch bonnet pepper finely chopped (optional for spice)
  • 2 tablespoon vegetable oil
  • Salt and pepper to taste

Method
 

  1. Wash the callaloo leaves thoroughly and chop them into small pieces.
  2. Heat the vegetable oil in a large pan over medium heat. Add the onions, garlic, and peppers, and sauté until the onions are translucent.
  3. Add the callaloo leaves to the pan and cook until wilted, stirring occasionally.
  4. Let it cook for about 5 minutes, stirring occasionally.
  5. Add the shrimp to the pan and cook until they turn pink and opaque, about 5-7 minutes.
  6. Season the dish with salt and pepper to taste.
  7. Serve the Callaloo and Shrimp hot over rice or with some fried plantains on the side.
