Preheat your oven to 350°F (180°C) and grease a 9x13 inch baking pan.
In a large mixing bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract and lemon zest.
In a separate bowl, sift together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
Pour the batter into the prepared baking pan and smooth the top.
Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bizcocho to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Slice and serve the bizcocho on its own or with your favorite toppings.
