Ingredients
  

  • 1 lb skirt steak thinly sliced
  • 2 bell peppers sliced
  • 1 large onion sliced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning (you can use store-bought or make your own with a blend of chili powder, cumin, paprika, garlic powder, onion powder, and oregano)
  • Salt and pepper to taste
  • Flour tortillas
Optional toppings:
  • shredded cheese
  • guacamole
  • sour cream
  • salsa

Method
 

  1. In a large bowl, combine the sliced steak, fajita seasoning, garlic, salt, and pepper. Let it marinate for at least 30 minutes.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the marinated steak slices and cook until browned, about 3-4 minutes per side. Remove the steak from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and peppers and cook until they are tender-crisp, about 5-6 minutes.
  4. Return the cooked steak to the skillet with the vegetables and toss everything together to combine.
  5. Warm the flour tortillas in a separate skillet or microwave.
  6. Serve the beef and vegetable mixture on the warm tortillas. Add your favorite toppings like shredded cheese, guacamole, sour cream, and salsa.
  7. Enjoy!
