In a large mixing bowl, combine the warm water, yeast, and sugar. Let it sit for about 5 minutes until the mixture becomes frothy.
Add the salt and flour to the yeast mixture and stir until a dough forms.
Knead the dough on a lightly floured surface for about 5-10 minutes until it becomes smooth and elastic. Place the dough back in the bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Once the dough has risen, divide it into 4 equal portions and roll each portion into a flat oval shape, resembling a beaver tail.
Heat the vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (180°C).
Carefully place one dough oval into the hot oil and fry for about 1-2 minutes on each side until golden brown and puffed up. Repeat with the remaining dough ovals.
Drain the fried pastries on paper towels to remove excess oil.
While the pastries are still warm, sprinkle your favorite toppings over the top, such as cinnamon sugar, Nutella, jam, or any other sweet treats you like.
