Bacon jam is a delicious and savory spread made from cooked bacon, onions, brown sugar, vinegar, and sometimes other ingredients like coffee or bourbon. It has a rich, sweet, and smoky flavor that pairs well with a variety of dishes, from burgers and sandwiches to cheese plates and even desserts.
In a large skillet or saucepan, cook the chopped bacon over medium heat until it is crispy. Remove the bacon from the pan and set it aside, leaving the bacon grease in the pan.
Add the chopped onion to the bacon grease in the pan and cook until it becomes soft and translucent, about 5-7 minutes.
Add the brown sugar, apple cider vinegar, maple syrup, black pepper, and cayenne pepper (if using) to the pan. Stir to combine all the ingredients.
Return the cooked bacon to the pan and stir everything together. Let the mixture simmer over low heat for about 30-40 minutes, stirring occasionally, until it thickens to a jam-like consistency.
Once the bacon jam has thickened, remove the pan from the heat and let it cool slightly.
Transfer the bacon jam to a jar or airtight container and store it in the refrigerator. It can be served warm or chilled.
