Ingredients
  

  • 8-10 apples (a mix of sweet and tart varieties)
  • 4 cups water
  • 1/2 cup brown sugar (adjust to taste)
  • 2 cinnamon sticks
  • 1 teaspoon whole cloves
  • 1 teaspoon whole allspice berries
  • 1 orange sliced
  • nutmeg additional for spice (optional)
  • star anise additional for spice (optional)

  1. Wash and chop the apples into quarters, leaving the skins and cores intact.
  2. In a large pot, combine the chopped apples, water, brown sugar, cinnamon sticks, cloves, allspice berries, and orange slices.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1-2 hours, stirring occasionally.
  4. Mash the apples with a potato masher or spoon to release more flavor.
  5. Remove the pot from heat and let it cool slightly.
  6. Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher or bowl, pressing on the solids to extract all the liquid.
  7. Discard the solids and serve the apple cider hot or chilled. You can garnish with a cinnamon stick or orange slice if desired.
