Wash and chop the apples into quarters, leaving the skins and cores intact.
In a large pot, combine the chopped apples, water, brown sugar, cinnamon sticks, cloves, allspice berries, and orange slices.
Bring the mixture to a boil, then reduce the heat and let it simmer for about 1-2 hours, stirring occasionally.
Mash the apples with a potato masher or spoon to release more flavor.
Remove the pot from heat and let it cool slightly.
Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher or bowl, pressing on the solids to extract all the liquid.
Discard the solids and serve the apple cider hot or chilled. You can garnish with a cinnamon stick or orange slice if desired.
