Prepare the filling:

  • Mash the boiled potatoes. Heat 1 tablespoon oil in a pan and sauté the onion, green chilies, and ginger for 2–3 minutes.
  • Add cumin, turmeric, chili powder, and garam masala. Stir briefly, then add the mashed potatoes and salt.
  • Cook for 2–3 minutes. Mix in coriander and lemon juice, then let the mixture cool.

Shape:

  • Divide the potato mixture into 8 portions and form each into a flat, round or oval patty.

Make the batter:

  • Combine gram flour, rice flour, turmeric, chili powder, salt, and baking soda. Gradually add water to make a smooth, thick batter that coats the back of a spoon.

Fry:

  • Heat oil over medium heat to about 175°C/350°F. Dip each potato patty into the batter, coating it completely, and carefully place it in the oil.
  • Fry in batches for 3–4 minutes, turning occasionally, until golden and crisp. Drain on paper towels.
  • Serve hot with coriander chutney, tamarind chutney, or tomato ketchup.
