I use this when I bake Pignoli cookies. I've only gotten compliments from those who eat the cookies. There is a shortcut that I only recently discovered. I used to break almond paste into small pieces when I combined it with the egg whites, beat with a blender just to soften almond paste. Too much made it impossible to roll the cookies in the pine nuts because the mixture would be too soft. Not enough meant that I would have to crush with a fork. I now use a large cheese grater. Grate the almond paste into the egg whites. It mixes with a fork, almost without any effort, allowing me to add the remaining ingredients. My recipe calls for the mixture to remain in the refrigerator for an hour. I now divide the mixture into two bowls and, when I'm ready to roll the cookies, I leave one bowl in the refrigerator untill I finish with the first batch. By doing that, the remaining mixture also is firmer and rolls into the pine nuts easily. Enjoy!
