Bun rieu cua is a traditional Vietnamese noodle soup made with a tomato-based broth, crab meat, and tofu. It is typically served with fresh herbs, lime, and sometimes shrimp paste.

Ingredients
  

  • 1 lb fresh crab meat (can also use canned crab meat)
  • 1 package firm tofu diced into small cubes
  • 1 can diced tomatoes
  • 1 onion finely chopped
  • 4 cloves garlic minced
  • 1 tablespoon shrimp paste (optional)
  • 8 cups chicken broth or vegetable broth
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • 1 lb rice vermicelli noodles
  • Fresh herbs (such as cilantro, mint, Thai basil)
  • Lime wedges
  • Bean sprouts
  • green onions sliced
  • Chili slices (optional)

Method
 

  1. In a large pot, sauté the onions and garlic until fragrant.
  2. Add the diced tomatoes, shrimp paste, and broth. Bring to a simmer.
  3. Add the crab meat and tofu to the pot. Season with fish sauce, sugar, salt, and pepper. Let it simmer for about 20 minutes.
  4. While the broth simmers, cook the rice vermicelli noodles according to package instructions. Drain and set aside.
  5. To serve, divide the cooked noodles into bowls. Ladle the hot broth over the noodles.
  6. Garnish with fresh herbs, lime wedges, bean sprouts, green onions, and chili slices.
  7. Serve hot and enjoy!
