Ingredients
- 2 cups chickpea flour (besan)
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon carom seeds (ajwain)
- Salt to taste
- Water as needed
- Oil for deep frying

- In a mixing bowl, combine chickpea flour, turmeric powder, red chili powder, carom seeds, and salt. Mix well to combine the dry ingredients.

- Press the dough directly into the hot oil in a circular motion to form long strands of gathiya. Fry until they turn golden brown and crispy.
- Remove the fried gathiya using a slotted spoon and drain excess oil on a paper towel.
- Repeat the process with the remaining dough.
- Allow the gathiya to cool completely before storing in an airtight container.
