Beef Stew Kolachy
Ingredients
- 1 lb beef stew meat cubed
- 1 onion diced
- 2 carrots sliced
- 2 potatoes diced
- 2 cloves garlic minced
- 2 cups beef broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 package refrigerated biscuit dough
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, brown the beef stew meat over medium-high heat until browned on all sides.
- Add the onion, carrots, potatoes, and garlic to the pot and sauté for a few minutes until the vegetables start to soften.
- Pour in the beef broth and add the dried thyme, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 1-2 hours until the beef is tender and the stew is thickened.
- While the stew is simmering, roll out the biscuit dough on a floured surface and cut into 4 equal portions.
- Spoon the beef stew mixture onto each piece of dough, then fold the dough over the filling and pinch the edges to seal.
- Place the kolachy on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the dough is golden brown.
- Serve hot and enjoy!
