Belizean rice and beans is a popular dish in Belize that consists of rice cooked with red kidney beans and coconut milk, seasoned with various spices such as garlic, onion, and thyme. Ingredients
  

  • 1 cup rice (long-grain white rice)
  • 1 can red kidney beans drained and rinsed
  • 1 cup coconut milk
  • 1 cup water
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tablespoon thyme
  • 1 tablespoon salt
  • 1/2 tablespoon black pepper
  • 1 tablespoon cooking oil

Method
 

  1. In a large pot, heat the cooking oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant.
  2. Add the rice to the pot and stir to coat the rice with the onion and garlic mixture.
  3. Pour in the coconut milk and water, then add the drained and rinsed red kidney beans, thyme, salt, and black pepper. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid. Let it simmer for about 20-25 minutes, or until the rice is cooked and all the liquid is absorbed.
  5. Once the rice is cooked, fluff it with a fork and serve hot.
  6. Enjoy!
