Mulgipuder is a traditional Estonian dish made from barley and potatoes. It’s a hearty and comforting meal typically served with sour cream and sometimes bacon or sausage.

Ingredients
  

  • 1 cup pearl barley
  • 2 large potatoes peeled and diced
  • 1 onion chopped
  • 4 cups water
  • 1 teaspoon salt
  • 1/2 cup bacon or sausage (optional)
  • Sour cream for serving

Method
 

  1. In a large pot, combine the pearl barley, potatoes, onion, water, and salt.
  2. Bring to a boil, then reduce heat to low and simmer for about 45 minutes to 1 hour, stirring occasionally.
  3. In a separate pan, cook the bacon or sausage until crispy. Remove from the pan and chop into small pieces.
  4. Once the barley and potatoes are tender and the mixture has thickened, stir in the cooked bacon or sausage (if using).
  5. Serve the Mulgipuder hot, topped with a dollop of sour cream.
  6. Enjoy!
