Kugelis is a traditional Lithuanian dish that is essentially a potato pudding or casserole. It is made by mixing grated potatoes with eggs, onions, bacon, and sometimes other ingredients like milk or sour cream. The mixture is then baked until the top is crispy and golden brown.

Ingredients
  

  • 2 lbs potatoes
  • 1 onion finely chopped
  • 4 slices bacon diced
  • 2 eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • Butter for greasing the baking dish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Peel and grate the potatoes using a box grater or a food processor.
  3. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
  4. In a large mixing bowl, combine the grated potatoes, chopped onion, diced bacon, eggs, milk, salt, and pepper. Mix well to combine.
  5. Grease a baking dish with butter and pour the potato mixture into the dish, spreading it out evenly.
  6. Bake in the preheated oven for about 1 to 1.5 hours, or until the top is crispy and golden brown.
  7. Serve the Kugelis hot, topped with sour cream or applesauce if desired.
