Cepelinai is a traditional Lithuanian dish made from grated and riced potatoes, filled with ground meat, cheese, or mushrooms, and typically served with sour cream or bacon bits. They are shaped like zeppelin airships, hence their name.

Ingredients
  

  • 4 large potatoes
  • 1 lb ground pork
  • 1 onion finely chopped
  • Salt and pepper to taste
  • Sour cream for serving
  • bacon bits for serving

Method
 

  1. Peel and grate the potatoes. Squeeze out excess liquid using a clean kitchen towel.
  2. In a bowl, combine the grated potatoes with a pinch of salt.
  3. In a separate bowl, mix the ground pork with the chopped onion, salt, and pepper.
  4. Take a handful of the grated potatoes and form a flat disc in your hand. Add a spoonful of the meat mixture to the center and fold the potato mixture around it, shaping it into an oval.
  5. Repeat with the remaining ingredients to make 4 Cepelinai.
  6. Bring a pot of salted water to a boil. Carefully add the Cepelinai and cook for about 20-25 minutes, or until they float to the surface.
  7. Remove the Cepelinai with a slotted spoon and serve hot with sour cream and bacon bits on top.
  8. Enjoy!
