Shrimp Machbous is a traditional Middle Eastern dish made with shrimp, aromatic rice, and a blend of spices like cinnamon, cardamom, and cloves. Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 2 cups basmati rice
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 2 tomatoes diced
  • 2 tablespoons tomato paste
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • 4 cups chicken broth or vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish
  • Lemon wedges for serving

Method
 

  1. In a large pot or Dutch oven, heat some oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, turmeric, cumin, coriander, and cinnamon. Cook for another minute until fragrant.
  3. Stir in the diced tomatoes and tomato paste, and cook for a few more minutes.
  4. Add the basmati rice to the pot and stir to coat the rice with the tomato mixture.
  5. Pour in the chicken or vegetable broth and bring to a simmer. Cover the pot and cook for about 15-20 minutes, until the rice is almost cooked.
  6. Add the shrimp to the pot, gently stirring them into the rice mixture. Cover and cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.
  7. Season with salt and pepper to taste.
  8. Serve the Shrimp Machbous hot, garnished with fresh cilantro or parsley and lemon wedges on the side.
  9. Enjoy!
