Lucky Noodle is a type of Chinese noodle dish that is believed to bring good luck and prosperity according to Chinese tradition. Ingredients
  

  • 400 g Chinese egg noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 inch ginger minced
  • 1 carrot julienned
  • 1 bell pepper thinly sliced
  • 200 g snow peas
  • 200 g baby corn sliced
  • 200 g mushrooms sliced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons of water
Optional toppings:
  • green onions sliced
  • sesame seeds

Method
 

  1. Cook the noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Add the garlic and ginger, and sauté for 1-2 minutes until fragrant.
  4. Add the carrot, bell pepper, snow peas, baby corn, and mushrooms. Cook for 5-7 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix together the soy sauce, oyster sauce, and sesame oil. Pour the sauce over the vegetables and stir to combine.
  6. Add the cooked noodles to the skillet and toss to coat in the sauce.
  7. Stir in the cornstarch mixture to thicken the sauce.
  8. Cook for another 2-3 minutes until everything is heated through.
  9. Serve the Lucky Noodles hot, garnished with sliced green onions and sesame seeds if desired.
