Method
- Cook the noodles according to package instructions, then drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat.
- Add the garlic and ginger, and sauté for 1-2 minutes until fragrant.
- Add the carrot, bell pepper, snow peas, baby corn, and mushrooms. Cook for 5-7 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together the soy sauce, oyster sauce, and sesame oil. Pour the sauce over the vegetables and stir to combine.
- Add the cooked noodles to the skillet and toss to coat in the sauce.
- Stir in the cornstarch mixture to thicken the sauce.
- Cook for another 2-3 minutes until everything is heated through.
- Serve the Lucky Noodles hot, garnished with sliced green onions and sesame seeds if desired.
