Method
- In a small bowl, dissolve the yeast in the lukewarm water and let it sit for about 5 minutes until it starts to foam.
- In a large mixing bowl, combine the all-purpose flour, whole wheat flour, and salt.
- Make a well in the center of the flour mixture and pour in the yeast mixture. Stir together until a rough dough forms.
- Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until doubled in size.
- Preheat your oven to 425°F (220°C) and place a baking stone or baking sheet in the oven to preheat.
- Punch down the dough and shape it into a round loaf. Place the loaf on a parchment-lined baking sheet and let it rise for another 30 minutes.
- Slash the top of the loaf with a sharp knife and brush with water.
- Place the baking sheet on the preheated baking stone/pan and bake for about 30-35 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Let the bread cool on a wire rack before slicing and serving.
