Berry Compote: Ingredients:
  • 2 cups mixed berries (such as strawberries, blueberries, raspberries)
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 tablespoon lemon juice

Method
 

French Toast:
  1. In a shallow dish, whisk together eggs, milk, vanilla extract, and cinnamon.
  2. Heat a skillet or griddle over medium heat and melt some butter.
  3. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.
  4. Place the soaked bread in the skillet and cook until golden brown on both sides, about 2-3 minutes per side.
  5. Repeat with the remaining bread slices.
Berry Compote: Ingredients:
  1. In a saucepan, combine the berries, sugar, water, and lemon juice.
  2. Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens slightly, about 10-15 minutes.
To Serve:
  1. Place a couple of slices of French toast on each plate.
  2. Top with a spoonful of berry compote.
  3. Drizzle with maple syrup and a dollop of marmalade.
  4. Serve warm and enjoy!
