French toast with berry compote and maple syrup
Ingredients
Method
- In a shallow dish, whisk together eggs, milk, vanilla extract, and cinnamon.
- Heat a skillet or griddle over medium heat and melt some butter.
- Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.
- Place the soaked bread in the skillet and cook until golden brown on both sides, about 2-3 minutes per side.
- Repeat with the remaining bread slices.
- In a saucepan, combine the berries, sugar, water, and lemon juice.
- Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens slightly, about 10-15 minutes.
- Place a couple of slices of French toast on each plate.
- Top with a spoonful of berry compote.
- Drizzle with maple syrup and a dollop of marmalade.
- Serve warm and enjoy!
