- 2 cups Poha (flattened rice)
- 1 large onion finely chopped
- 1-2 green chilies chopped
- 1 small potato peeled and diced
- 1/2 cup green peas
- 1/4 tablespoon turmeric powder
- 1/2 tablespoon mustard seeds
- 1/2 tablespoon cumin seeds
- 8-10 curry leaves
- 2 tablespoon oil
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving
Instructions
- Rinse the poha in a colander under running water until it softens. Set aside.
- Heat oil in a pan and add mustard seeds. Once they start to splutter, add cumin seeds and curry leaves.
- Add chopped onions, green chilies, and sauté until onions turn translucent.
- Add diced potatoes and green peas. Cook until the potatoes are tender.
- Add turmeric powder and salt to taste. Mix well.
- Add the rinsed poha to the pan and gently toss everything together until well combined.
- Cover and cook for 2-3 minutes on low heat.
- Remove from heat and garnish with fresh coriander leaves.
- Serve hot with lemon wedges on the side.
