Earthquake Cookies is a fun and delicious dessert made with chocolate chips, pecans, and powdered sugar. They get their name from their cracked and crinkled appearance, resembling the aftermath of an earthquake.

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/2 cup chopped pecans
  • 1/2 cup powdered sugar for coating

Method
 

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the vanilla extract and egg, and mix until well combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Stir in the chocolate chips and chopped pecans.
  7. Roll the dough into small balls, about 1 inch in diameter.
  8. Roll each ball in powdered sugar until fully coated.
  9. Place the coated balls on the prepared baking sheet, spacing them apart.
  10. Bake in the preheated oven for 10-12 minutes, or until the cookies are set.
  11. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
