Ingredients
- 1 cup cooked rice
- 1/2 cup grated cheese (such as cheddar or Gouda)
- 1/4 cup ham chopped, or cooked bacon (optional)
- 1/4 cup parsley chopped
- 1/2 cup breadcrumbs
- 2 eggs
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- In a large bowl, mix the cooked rice, grated cheese, chopped ham or bacon, parsley, salt, and pepper until well combined.
- Take small portions of the mixture and shape them into small balls or cylinder shapes.
- In a shallow dish, beat the eggs. In another dish, place the breadcrumbs.
- Dip each rice ball into the beaten eggs, then roll them in the breadcrumbs until coated.
- Heat vegetable oil in a frying pan over medium heat.
- Fry the rice croquettes in batches until golden brown and crispy on all sides, about 2-3 minutes per batch.
- Remove the croquettes from the oil and place them on a paper towel-lined plate to drain any excess oil.
