Ingredients
For Koftas:
- 2 cups grated bottle gourd (lauki)
- 1/2 cup besan (chickpea flour)
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Oil for frying
For Gravy:
- 2 large tomatoes chopped
- 1 onion chopped
- 1 inch ginger grated
- 3-4 garlic cloves minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Squeeze out excess water from grated bottle gourd and transfer it to a mixing bowl.
- Add besan, cumin powder, coriander powder, garam masala, and salt to the grated bottle gourd. Mix well to form a dough.
- Divide the mixture into small balls and deep fry them until golden brown. Drain on a paper towel and set aside.
- In a blender, blend tomatoes, onion, ginger, and garlic to make a smooth paste.
- Heat oil in a pan, add cumin seeds and let them splutter.
- Add the tomato-onion paste and cook until the oil separates.
- Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Cook for a few minutes.
- Add water to adjust the consistency of the gravy and bring it to a simmer.
- Gently drop the fried koftas into the gravy and let them simmer for a few minutes.
- Garnish with fresh coriander leaves and serve hot with rice or naan.
