Ingredients
  

  • 2 pounds fresh clams
  • 8 slices bacon diced
  • 1/2 cup breadcrumbs
  • 1/4 cup red bell pepper finely chopped
  • 1/4 cup green bell pepper finely chopped
  • 1/4 cup onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • Lemon wedges for serving

Method
 

  1. Preheat your oven to 450°F (230°C).
  2. Scrub the clams under cold running water to remove any dirt or sand. Discard any clams that are cracked or don’t close when tapped.
  3. In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate to drain excess grease.
  4. In the same skillet with the remaining bacon grease, add the chopped bell peppers, onion, and garlic. Sauté for about 5 minutes until the vegetables are softened.
  5. Stir in the breadcrumbs, chopped parsley, grated Parmesan cheese, lemon juice, and cooked bacon. Season with salt and black pepper to taste. Cook for an additional 2 minutes, then remove from heat.
  6. Arrange the clams on a baking sheet and spoon the breadcrumb mixture evenly over each clam.
  7. Place the baking sheet with the clams into the preheated oven and bake for about 10-12 minutes or until the clams have opened and the topping is golden brown.
  8. Carefully remove the clams from the oven and serve them hot with lemon wedges on the side.
