Method
- Preheat your oven to 450°F (230°C).
- Scrub the clams under cold running water to remove any dirt or sand. Discard any clams that are cracked or don’t close when tapped.
- In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate to drain excess grease.
- In the same skillet with the remaining bacon grease, add the chopped bell peppers, onion, and garlic. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the breadcrumbs, chopped parsley, grated Parmesan cheese, lemon juice, and cooked bacon. Season with salt and black pepper to taste. Cook for an additional 2 minutes, then remove from heat.
- Arrange the clams on a baking sheet and spoon the breadcrumb mixture evenly over each clam.
- Place the baking sheet with the clams into the preheated oven and bake for about 10-12 minutes or until the clams have opened and the topping is golden brown.
- Carefully remove the clams from the oven and serve them hot with lemon wedges on the side.
