Chicken Dhansak is a delicious and popular dish from the Parsi cuisine of India. It’s a flavorful and hearty preparation that combines elements of Persian and Indian cooking. Ingredients
  

  • 1 pound chicken boneless skinless, diced
  • 1 cup lentils (preferably red or yellow), washed and soaked
  • 1 cup vegetables chopped (onions, tomatoes, pumpkin, etc.)
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons Dhansak masala (readily available in Indian grocery stores)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to your spice preference)
  • Salt to taste
  • 2 tablespoons oil
  • 4 cups water
  • Fresh cilantro leaves for garnish

Method
 

  1. Heat oil in a large pot or pressure cooker over medium heat.
  2. Add the ginger-garlic paste and sauté until fragrant.
  3. Add the chicken pieces and cook until they turn golden brown.
  4. Stir in the Dhansak masala, turmeric powder, red chili powder, and salt. Mix well to coat the chicken evenly with the spices.
  5. Add the soaked lentils and chopped vegetables to the pot. Stir everything together.
  6. Pour in the water and give it a good stir. If using a pressure cooker, cover and cook for about 4-5 whistles, or if using a regular pot, cover and cook for about 45-60 minutes until the lentils are tender and the flavors have melded together.
  7. Once cooked, taste and adjust the seasoning if needed.
  8. Serve the Chicken Dhansak hot, garnished with fresh cilantro leaves.
  9. It pairs well with steamed rice or naan bread.
