Chicken Dhansak

Method
- Heat oil in a large pot or pressure cooker over medium heat.
- Add the ginger-garlic paste and sauté until fragrant.
- Add the chicken pieces and cook until they turn golden brown.
- Stir in the Dhansak masala, turmeric powder, red chili powder, and salt. Mix well to coat the chicken evenly with the spices.
- Add the soaked lentils and chopped vegetables to the pot. Stir everything together.
- Pour in the water and give it a good stir. If using a pressure cooker, cover and cook for about 4-5 whistles, or if using a regular pot, cover and cook for about 45-60 minutes until the lentils are tender and the flavors have melded together.
- Once cooked, taste and adjust the seasoning if needed.
- Serve the Chicken Dhansak hot, garnished with fresh cilantro leaves.
- It pairs well with steamed rice or naan bread.
