Nasi Liwet Solo

Method
- Rinse the jasmine rice with water until the water runs clear. Drain the rice and set it aside.
- In a large pan or pot, heat the vegetable oil over medium heat. Add the minced garlic and shallots and sauté until fragrant and golden brown.
- Add the rice to the pan and stir it for a few minutes until it is coated with the garlic and shallot mixture.
- Pour in the coconut milk, salt, sugar, bay leaves, and lemongrass stalks. Stir everything together.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Once the rice is cooked, fluff it with a fork to separate the grains. Remove the bay leaves and lemongrass stalks.
- Serve the Nasi Liwet Solo in individual bowls, and you can add your choice of toppings such as fried chicken or tempeh, boiled eggs, fried tofu, sambal, sliced cucumber, and garnish with fried shallots or garlic.
