Nasi Liwet Solo is a traditional Indonesian rice dish that originates from the city of Solo in Central Java, Indonesia. It is renowned for its rich flavors and aromatic blend of spices. The dish is traditionally cooked with jasmine rice and coconut milk, giving it a creamy and slightly sweet taste. Nasi Liwet Solo is often served with various side dishes such as fried chicken or tempeh, boiled eggs, fried tofu, sambal (chili paste), and sliced cucumber.

Ingredients
  

  • 2 cups jasmine rice
  • 2 cups coconut milk (500 mls)
  • 2 cloves garlic minced
  • 2 shallots (minced)
  • 2 bay leaves
  • 2 stalks lemongrass (bruised)
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
Optional toppings:
  • Fried chicken or tempeh
  • Boiled eggs
  • Fried tofu
  • Sambal (chili paste)
  • Cucumber sliced
  • Fried shallots or garlic for garnish

Method
 

  1. Rinse the jasmine rice with water until the water runs clear. Drain the rice and set it aside.
  2. In a large pan or pot, heat the vegetable oil over medium heat. Add the minced garlic and shallots and sauté until fragrant and golden brown.
  3. Add the rice to the pan and stir it for a few minutes until it is coated with the garlic and shallot mixture.
  4. Pour in the coconut milk, salt, sugar, bay leaves, and lemongrass stalks. Stir everything together.
  5. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Once the rice is cooked, fluff it with a fork to separate the grains. Remove the bay leaves and lemongrass stalks.
  7. Serve the Nasi Liwet Solo in individual bowls, and you can add your choice of toppings such as fried chicken or tempeh, boiled eggs, fried tofu, sambal, sliced cucumber, and garnish with fried shallots or garlic.
