Babi Rica-rica is a delicious dish from Indonesia! It’s a traditional spicy pork dish. The term “rica-rica” refers to the cooking method, which involves stirring the meat with a variety of aromatic spices such as chili peppers, shallots, garlic, ginger, and lemongrass.

Ingredients
  

  • 2 pounds pork cut into small pieces
  • 4-6 red chili peppers finely chopped (adjust according to your spice preference)
  • 5 shallots finely chopped
  • 4 cloves garlic minced
  • 1 inch ginger grated
  • 3 stalks emongrass bruised
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon chicken powder (optional)
  • 1 cup water
  • Lime wedges and fresh cilantro for garnish (optional)

Method
 

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the shallots, garlic, ginger, and lemongrass. Sauté until fragrant and the shallots turn translucent.
  3. Add the chopped chili peppers and continue to stir-fry for a few minutes.
  4. Add the pork pieces to the pan and cook until they are browned on all sides.
  5. Season with salt, sugar, and chicken powder (if using). Stir well to evenly coat the pork.
  6. Pour in the water and bring the mixture to a boil. Reduce the heat, cover the pan, and let it simmer for about 45 minutes or until the pork is tender and the flavors have melded together.
  7. Once the pork is cooked, remove the lid and let any excess liquid evaporate, allowing the sauce to thicken.
  8. Serve the Babi Rica-rica hot with steamed rice. Garnish with lime wedges and fresh cilantro, if desired.
