Falafel
Ingredients
- 1 ½ cups dried chickpeas (soaked overnight)
- 1 small onion roughly chopped
- 3-4 cloves garlic minced
- 1 cup fresh parsley chopped
- 1 cup fresh cilantro chopped
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon baking soda
- 2 tablespoons all-purpose flour or chickpea flour (for binding)
- Vegetable oil (for frying)
Instructions
- Drain and rinse the soaked chickpeas. Pat them dry with a paper towel.
- In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, pepper, and baking soda. Pulse until everything is well chopped and blended, but still has some texture.
- Transfer the mixture to a mixing bowl and stir in the flour. If the mixture seems too wet, you can add a little more flour until it holds its shape.
- Shape the mixture into small balls or patties, about 1-2 inches in diameter.
- In a large frying pan, heat about 1 inch of vegetable oil over medium-high heat.
- Carefully place the falafel balls/patties into the hot oil, being mindful not to overcrowd the pan. Fry them for about 3-4 minutes per side, or until they turn golden brown and crispy.
- Once cooked, remove the falafel from the oil and drain on a paper towel-lined plate to remove any excess oil.
- Serve the falafel in pita bread or flatbread, with your choice of fresh vegetables, tahini sauce, and other toppings. Enjoy!
