- Stir in the caster sugar, mixed spice (if using), currants or raisins, and chopped candied peel.
- Add the beaten egg to the mixture and stir well. Gradually add the milk, a tablespoon at a time, until the dough comes together. The dough should be soft and slightly sticky.
- Turn the dough out onto a floured surface and gently knead it a few times to bring it together.
- Roll out the dough to a thickness of about 2.5 cm (1 inch) and use a round cookie cutter to cut out Fat Rascal shapes. Place them onto a baking tray lined with parchment paper, leaving some space between each one.
- If desired, press flaked almonds onto the tops of the Fat Rascals to add a decorative touch.
- Bake in the preheated oven for 12-15 minutes, or until the Fat Rascals are golden brown and cooked through.
- Once baked, transfer the Fat Rascals to a wire rack to cool. If desired, dust with icing sugar before serving.
