Instructions

  • Start by boiling the potatoes in a large pot of salted water until they are fork-tender. Once cooked, drain and set them aside to cool.
  • While the potatoes are cooking, prepare the cabbage. Remove the outer leaves and core of the cabbage, then thinly slice it.
  • In a separate large pot, heat a drizzle of olive oil and add the chopped bacon. Cook until it becomes crispy and releases its fats.
  • Add the minced garlic to the pot and sauté it until fragrant. Be careful not to burn the garlic.
  • Now, add the sliced cabbage to the pot and cook it over medium heat until it becomes tender and slightly wilted. Stir occasionally to ensure even cooking.
  • Meanwhile, peel the cooled potatoes and roughly mash them in a bowl. You can leave some small chunks for added texture.
  • Once the cabbage is cooked, add the mashed potatoes to the pot and mix everything together gently until well combined. Season with salt and pepper to taste.
  • Continue cooking the Trinxat for a few more minutes, allowing the flavors to meld together.
  • Finally, transfer the Trinxat to a serving dish and garnish with a drizzle of olive oil and some crispy bacon bits on top.
