Gefilte fish

Gefilte fish

Gefilte fish is a traditional Jewish dish. Gefilte fish is typically made by grinding up white fish, like carp or whitefish, along with other ingredients like onions, matzo meal, eggs, and spices. The mixture is then shaped into patties or balls, and boiled or poached until cooked. It’s often served cold with a dollop of horseradish, and it’s a popular dish during Jewish holidays like Passover.

Ingredients

  • 2 pounds white fish fillets (carp, whitefish, or a combination)
  • 1 onion finely chopped
  • 2 tablespoons matzo meal (or breadcrumbs as a substitute)
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup sugar
  • 1/4 cup water
  • 2 carrots sliced
  • Fresh dill or parsley for garnish (optional)

Instructions

  • In a food processor, blend the white fish fillets until finely ground. Transfer to a large mixing bowl.
  • Add the finely chopped onion, matzo meal (or breadcrumbs), eggs, salt, and pepper to the bowl. Mix well until all the ingredients are evenly combined.
  • Wet your hands with water to prevent sticking, and shape the fish mixture into small oval-shaped patties or balls.
  • In a large pot, combine the sugar and water, and bring it to a gentle simmer.
  • Carefully place the fish patties or balls into the simmering liquid, along with the sliced carrots.
  • Cover the pot and let it simmer over low heat for about 1 hour, or until the fish is fully cooked and firm.
  • Once cooked, remove the Gefilte fish from the liquid and let it cool.
  • You can serve Gefilte fish either warm or chilled. If serving chilled, refrigerate for a few hours before serving.
  • Garnish with fresh dill or parsley, if desired, and serve with horseradish or a side of your choice.
