Cheesy and delicious, this vegetarian dish is quick and easy to prepare and full of Italian flavors. Serve with a nice side salad and crusty bread and you have a beautiful meatless dinner.

Ingredients
  

  • 1 medium cauliflower head sliced into ½-inch thick steaks
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup Italian seasoned panko breadcrumbs
  • 3 tablespoons grated parmesan cheese
  • 1/2 tablespoon dried basil
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese shredded
  • 1/4 cup fresh parsley chopped
  • sea salt and black pepper to taste

Method
 

  1. Preheat oven to 400° F. Line a large-rimmed baking sheet with a piece of parchment paper.
  2. Arrange the cauliflower steaks on the prepared baking sheet and brush with olive oil. Season to taste with salt and pepper.
  3. In a small bowl, mix the breadcrumbs, parmesan, and basil. Add salt and pepper to taste. Evenly sprinkle the breadcrumb mixture on top of the cauliflower steaks.
  4. Bake 20-25 minutes until the cauliflower is fork-tender.
  5. Remove the cauliflower from the oven. Spoon some marinara sauce on top of each steak. Sprinkle with mozzarella cheese and return into the oven for 10-15 additional minutes or until the cauliflower is brown around the edges and the cheese is melted.
  6. Sprinkle with fresh parsley and serve.
  7. Enjoy!

Notes

If Italian-seasoned panko is not available, just add Italian seasoning to taste to plain panko crumbs.
