Baked Cauliflower Parmesan
Ingredients
- 1 medium cauliflower head sliced into ½-inch thick steaks
- 1 tablespoon extra virgin olive oil
- 1/2 cup Italian seasoned panko breadcrumbs
- 3 tablespoons grated parmesan cheese
- 1/2 tablespoon dried basil
- 1 cup marinara sauce
- 1 cup mozzarella cheese shredded
- 1/4 cup fresh parsley chopped
- sea salt and black pepper to taste
Instructions
- Preheat oven to 400° F. Line a large-rimmed baking sheet with a piece of parchment paper.
- Arrange the cauliflower steaks on the prepared baking sheet and brush with olive oil. Season to taste with salt and pepper.
- In a small bowl, mix the breadcrumbs, parmesan, and basil. Add salt and pepper to taste. Evenly sprinkle the breadcrumb mixture on top of the cauliflower steaks.
- Bake 20-25 minutes until the cauliflower is fork-tender.
- Remove the cauliflower from the oven. Spoon some marinara sauce on top of each steak. Sprinkle with mozzarella cheese and return into the oven for 10-15 additional minutes or until the cauliflower is brown around the edges and the cheese is melted.
- Sprinkle with fresh parsley and serve.
