Gajar Ka Halwa is a delicious Indian dessert made with grated carrots, sugar, milk, and a generous amount of ghee (clarified butter). The carrots are slow-cooked in milk until they become soft and creamy, then sugar and spices like cardamom are added to enhance the flavor. Ingredients
  

  • 1 pound grated carrots
  • 1 liter full-fat milk
  • 1 cup sugar
  • 4 tablespoons ghee (clarified butter)
  • 1/4 cup nuts chopped (almonds, cashews, pistachios)
  • 1/2 teaspoon cardamom powder
  • pinch saffron strands (optional)

Method
 

  1. Heat a large, heavy-bottomed pan or kadai on medium heat and add the ghee.
  2. Once the ghee is melted, add the grated carrots and sauté them for about 5 minutes until they soften slightly.
  3. Pour the milk into the pan with the carrots and let it come to a boil.
  4. Reduce the heat to low and let the carrots cook in the milk, stirring occasionally, until the milk starts to thicken and reduce. This process can take around 45 minutes to 1 hour, so be patient!
  5. Once the milk has thickened considerably, add the sugar and mix well. Allow the mixture to simmer for another 15-20 minutes until the sugar has dissolved and the halwa has a thick, pudding-like consistency.
  6. Add the cardamom powder and saffron strands (if using) and mix them into the halwa.
  7. In a separate small pan, heat a tablespoon of ghee and lightly roast the chopped nuts until they become fragrant and slightly golden. Remove the nuts from the pan and set them aside.
  8. Finally, add the roasted nuts to the halwa and mix them gently.
  9. Remove the Gajar Ka Halwa from the heat and let it cool slightly before serving. Enjoy it warm or chilled, as per your preference.
