Ingredients
  

  • 1.5 pounds back bacon 700g or Irish bacon
  • 1 head cabbage small roughly chopped
  • 4-5 medium-sized potatoes peeled and halved
  • 2 medium-sized carrots peeled and chopped (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

  1. In a large pot, place the bacon and cover it with water. Bring to a boil over medium heat and let it simmer for about 45 minutes to 1 hour. This will help reduce the saltiness of the bacon.
  2. After 45 minutes to 1 hour, add the potatoes and carrots (if using) to the pot. Simmer for another 15-20 minutes or until the potatoes are fork-tender.
  3. Next, add the chopped cabbage to the pot. Cook for an additional 10-15 minutes or until the cabbage is tender but still has a bit of crunch.
  4. Once everything is cooked to your liking, remove the pot from the heat and drain the water.
  5. Carefully transfer the bacon, cabbage, potatoes, and carrots to a serving platter. Slice or chop the bacon into pieces to serve.
  6. Season with salt and pepper to taste. You can also sprinkle some fresh parsley on top for added freshness and color.
  7. Serve your Irish Boiled Bacon and Cabbage while it’s still hot and enjoy this comforting dish with a side of creamy mashed potatoes or crusty bread.
