Khinkhali is a traditional Georgian dumpling filled with a delicious mixture of minced meat, onions, and various spices. It’s a very popular dish in Georgia and loved by many people around the world. The dough is hand-rolled and twisted at the top, giving it a unique and beautiful shape.

Ingredients
  

For the dough:
  • 2 ½ cups all-purpose flour
  • 1 cup warm water
  • 1 teaspoon salt
For the filling:
  • ½ pound ground beef (or any other minced meat of your choice)
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley finely chopped
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • ½ teaspoon ground cumin (optional)
  • ½ teaspoon red pepper flakes (optional)

Method
 

  1. In a large mixing bowl, combine the flour and salt. Gradually add the warm water while continuously mixing until a soft and elastic dough forms. Knead the dough for about 5 minutes, then cover it with a damp cloth and let it rest for 30 minutes.
  2. In another bowl, mix together the ground beef, chopped onion, minced garlic, parsley, black pepper, salt, cumin (if using), and red pepper flakes (if using). Make sure all the ingredients are well combined.
  3. Divide the dough into small portions and roll each portion into a thin circle of about 4-5 inches in diameter. Place a spoonful of the filling in the center of each circle.
  4. To shape the Khinkhali, hold the edges of the dough circle and start pleating and twisting it around the filling. You can twist and fold the dough in different ways to create a beautiful pattern, but make sure the top is tightly sealed to prevent the filling from leaking during cooking.
  5. Bring a large pot of salted water to a boil. Carefully drop the Khinkhali into the boiling water and cook for about 10-12 minutes, or until they float to the surface and the dough becomes tender.
  6. Using a slotted spoon, remove the cooked Khinkhali from the water and serve them hot. They are traditionally eaten by holding the twisted top and taking a bite, while leaving the top part untouched. Enjoy!
