Artichoke Soup
Ingredients
- 4 medium artichokes
- 1 onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth or chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley or thyme for garnish (optional)
Instructions
- Start by preparing the artichokes. Trim off the tough outer leaves and cut off the top third of each artichoke. Remove the fuzzy choke in the center and cut the remaining heart into small pieces. Set aside.
- In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.
- Add the artichoke hearts to the pot and cook for a few minutes, allowing them to slightly soften.
- Pour in the vegetable or chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20-25 minutes, or until the artichokes are tender.
- Once the artichokes are cooked, use an immersion blender or transfer the mixture to a blender to puree until smooth. Be careful when blending hot liquids! Return the mixture to the pot.
- Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes to allow the flavors to meld together.
- Once the soup is ready, ladle it into bowls and garnish with fresh herbs, if desired.
