Bun Mam is a traditional Vietnamese soup that is made with fermented fish paste, shrimp, pork and various vegetables. It is a popular and flavorful dish that is often served with rice noodles and fresh herbs.

Ingredients
  

  • 1 lb pork belly sliced into small pieces
  • 1 lb shrimp peeled and deveined
  • 1 cup fermented fish sauce mam tom
  • 1 tablespoon sugar
  • 3 cloves garlic minced
  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 1 tablespoon shrimp paste
  • 6 cups water
  • 1 package rice noodles
  • 1 bunch green onions sliced
  • 1 cup bean sprouts
  • 1 bunch mint leaves
  • 1 bunch cilantro

Method
 

  1. Heat the oil in a large pot over medium heat. Add the garlic and onion, and sauté until they are fragrant.
  2. Add the sliced pork belly and stir-fry until it is browned and cooked through.
  3. Add the shrimp and stir-fry until they are pink and cooked through.
  4. Add the fermented fish sauce, shrimp paste, sugar, and water to the pot. Bring the mixture to a boil, reduce the heat to low, and let it simmer for 30 minutes.
  5. Cook the rice noodles according to the instructions on the package.
  6. To serve, place a portion of noodles in a bowl, and ladle the soup over it. Top with green onions, bean sprouts, mint leaves, and cilantro as desired.
