  • Preheat the oven to 400°F.
  • Toast the bread in a toaster or under the broiler until golden brown.
  • Melt 2 tablespoons of the butter in a medium saucepan over medium heat. Add the flour and whisk until smooth.
  • Cook, whisking constantly, for 2 minutes. Gradually whisk in the milk and cook, whisking constantly, until the mixture boils and thickens.
  • Remove from the heat and stir in the salt, pepper, nutmeg, and 1 cup of the grated cheese.

  • Put the sandwiches on a baking sheet and sprinkle with the remaining cheese.
  • Bake until the cheese is melted and bubbly, about 5-7 minutes.
  • While the sandwiches are baking, melt the remaining butter in a nonstick skillet over medium heat.
  • Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, 2 to 3 minutes.
  • Top each sandwich with a fried egg and serve immediately. Enjoy!
