- 8 slices white bread
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 2 cups whole milk

- 1/4 teaspoon black pepper

- 1 1/2 cups Gruyere cheese grated
- 8 ham cooked, thin slices

Instructions
- Preheat the oven to 400°F.
- Toast the bread in a toaster or under the broiler until golden brown.
- Melt 2 tablespoons of the butter in a medium saucepan over medium heat. Add the flour and whisk until smooth.
- Cook, whisking constantly, for 2 minutes. Gradually whisk in the milk and cook, whisking constantly, until the mixture boils and thickens.
- Remove from the heat and stir in the salt, pepper, nutmeg, and 1 cup of the grated cheese.

- Put the sandwiches on a baking sheet and sprinkle with the remaining cheese.
- Bake until the cheese is melted and bubbly, about 5-7 minutes.
- While the sandwiches are baking, melt the remaining butter in a nonstick skillet over medium heat.
- Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, 2 to 3 minutes.
- Top each sandwich with a fried egg and serve immediately. Enjoy!
