Ingredients
- 1 whole chicken
- 3 cups red wine
- 1 cup chicken broth
- 4 cloves garlic
- 4 sprigs fresh thyme
- 4 strips bacon
- 12 pearl onions
- 8 oz. mushrooms sliced

- Add the onions, garlic, and mushrooms to the Dutch oven, and cook until the onions are translucent.
- Add the flour to the pan, and stir well.
- Add the red wine and chicken broth to the pan. Bring the mixture to a simmer, stirring occasionally.
- Add the chicken, bacon, and thyme to the pan.
- Cover the Dutch oven, and cook the mixture over low heat for about 2 hours.
- Once the chicken is cooked through and tender, remove it from the pan, and reserve it on a plate.
- Raise the heat to medium-high, and reduce the sauce by half. Add the butter to the pan, and stir well to incorporate.
- Serve the chicken with the sauce spooned over the top.
