  • Cut the chicken into 8 pieces, and season with salt and pepper.
  • Place a large Dutch oven over medium-high heat, then fry the bacon until it’s crispy. Remove the bacon from the pan, and reserve it.
  • Add the chicken pieces to the Dutch oven, and cook until they’re browned. Remove the chicken from the pan, and reserve it.
  • Add the onions, garlic, and mushrooms to the Dutch oven, and cook until the onions are translucent.
  • Add the flour to the pan, and stir well.
  • Add the red wine and chicken broth to the pan. Bring the mixture to a simmer, stirring occasionally.
  • Add the chicken, bacon, and thyme to the pan.
  • Cover the Dutch oven, and cook the mixture over low heat for about 2 hours.
  • Once the chicken is cooked through and tender, remove it from the pan, and reserve it on a plate.
  • Raise the heat to medium-high, and reduce the sauce by half. Add the butter to the pan, and stir well to incorporate.
  • Serve the chicken with the sauce spooned over the top.
