Moo Satay is a delicious Thai dish consisting of marinated and grilled skewered pork served with a tasty peanut sauce. It’s a popular street food in Thailand and is enjoyed for its savory and slightly sweet flavor.

Ingredients
  

  • 2 pounds pork loin thinly sliced
  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Wooden skewers soaked in water
For the peanut sauce:
  • 1 cup peanut butter
  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 clove garlic minced
  • 1 teaspoon red curry paste (optional)
  • Crushed peanuts and chopped cilantro for garnish

Method
 

  1. In a bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, minced garlic, turmeric, coriander, cumin, paprika, salt, and pepper. Add the sliced pork and let it marinate for at least 2 hours, preferably overnight.
  2. Thread the marinated pork slices onto the soaked wooden skewers.
  3. Preheat your grill to medium-high heat. Grill the pork skewers for about 3-4 minutes on each side or until cooked through and slightly charred.
  4. In a saucepan, combine peanut butter, coconut milk, soy sauce, brown sugar, rice vinegar, minced garlic, and red curry paste. Cook over low heat until the sauce is smooth and heated through.
  5. Serve the grilled Moo Satay with the peanut sauce on the side. Garnish with crushed peanuts and chopped cilantro. Enjoy!
