  • 4 cups fresh corn kernels or frozen corn kernels
  • 3 eggs
  • 1/4 cup melted butter
  • 1/4 cup sugar
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, whisk together the eggs, melted butter, sugar, flour, milk, salt, and pepper until well combined.
  3. Stir in the corn kernels until evenly coated with the egg mixture.
  4. Pour the mixture into the prepared baking dish.
  5. Bake in the preheated oven for about 45-50 minutes, or until the pudding is set and lightly golden on top.
  6. Remove from the oven and let it cool slightly before serving.
  7. Enjoy!
