Quinoa pilaf with chicken
Ingredients
- 1 cup quinoa
- 2 cups chicken broth
- 1 lb chicken breasts boneless skinless diced
- 1 tablespoon olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 1 bell pepper diced
- 1 zucchini diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Instructions
- Rinse the quinoa under cold water. In a medium saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15-20 minutes, or until the liquid is absorbed and the quinoa is tender.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion and garlic, and sauté until softened. Add the bell pepper and zucchini, and cook for another 3-5 minutes until the vegetables are tender.
- Return the cooked chicken to the skillet with the vegetables. Add the cooked quinoa, cumin, paprika, salt, and pepper. Stir well to combine and heat through.
- Serve the quinoa pilaf with chicken hot, garnished with fresh chopped parsley. Enjoy!
